Battered Chicken

Prep: 30 mins + 3 hrs marinating time.  Cooking: 30 mins.  Serves 6.


  • 6 small chicken thighs
  • 6 garlic cloves, crushed
  • 2″ piece fresh ginger, finely grated
  • 3 tbs lime juice
  • 1/2 cup plain yogurt
  • Oil, for deep-frying
Ingredients for Batter:
  • 3/4 cup chickpea flour
  • 1 tsp baking powder
  • 1 tsp garam masala
  • 1/4 tsp ground turmeric
  • 2 eggs, lightly beaten
  • 2 tbs plain yogurt

Remove skin from chicken and cut 3 deep incisions into each thigh.
Combine garlic, ginger, 1/2 teaspoon each salt and pepper, lime juice, and yogurt into a large bowl.  Add chicken and toss to coat.  Cover and refrigerate for 3 hours.
To make batter, sift flour, baking powder, garam masala and turmeric into large bowl.  Make a well in the center and add combined eggs, yogurt and 1/4 cup water.  Stir until smooth then dip each thigh into batter and deep-fry for 8-10 minutes in a wok filled about 1/3 way up.  Drain and serve immediately with desired condiments.
