Massaman Beef Curry Recipe from

Serves 4.


  • 2 tbs vegetable oil
  • 225 g shallots, coarsely chopped
  • 1 clove garlic ,crushed
  • 450 g beef tenderloin, cubed
  • 2 tbs Mussaman curry paste
  • 3 potatoes, cubed
  • 1 3/4 cups coconut milk
  • 2 tbs soy sauce
  • 2/3 cup beef stock
  • 1 tsp light brown sugar
  • 1/2 cup unsalted peanuts
  • handful cilantro, chopped

Heat oil in a wok over medium-high heat and stir-fry garlic and shallots for about a minute and a half.  Add beef and curry paste and stir-fry over high heat for 2 and a half minutes.  Add potatoes and next 4 ingredients.  Bring to a boil, stirring occasionally, then reduce heat and simmer for about 9 minutes.

Dry-roast peanuts over medium-high heat for about 2 and a half minutes.  Add to curry with cilantro and stir well.  Serve immediately.
